PB & J Muffins

Peanut Butter and Jam Muffin is a very quick breakfast with readily available ingredients. The total time to cook was only 10 min prep and 15 Min's baking. This is another substitute to peanut butter jelly sandwich.

Ingredients:

1 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup milk
1 large egg
1/4 cup sugar
1/2 cup peanut butter
1/4 cup jelly or preserve
1/6 cup veg. oil

For topping: sugar

Sift flour with salt and baking soda. To this sifted flour add egg, milk, sugar, peanut butter and oil. Fold gently till moist. Do not beat!!. Scoop the folded mix to muffin cups and top it with jelly and sugar. Bake at 375F for 15 mins if using mini muffin cups, for regular size muffins bake for 20 mins.

Decorative concrete floors

The word concrete always sounds so dull and cold but not if you have seen the concrete floor designs by the San Francisco based Transparent House. They have come up with these very attractive designs which can be applied either while poring concrete or after it has set. I was looking for how this is done and could not find any explanation on the processes.

Roast chicken for Thanksgiving

This was my second attempt at roasting a full chicken. The first time it turned out little dry, so this time I marinated for long with lots of orange juice and spices.

In the hurry to get the roast out to dinner did not take good photos after the roasting.

For this I really don't have the exact measure of all ingredients I used.

Ingredients:

Garlic, ginger, sage, cloves, fennel seeds, cinnamon, pepper, red pepper and sea salt. Mixed all the above in orange juice and marinated for 3 hrs.

In addition to the above I also stuffed chicken with egg and potato masala curry. Then added few vegges like zucchini, red onion, baby potatos, orange slices for roasting.
